Castle Rock Ranch raises premium grass-finished BEEF on irrigated pastures along the North Fork of the Coeur D’Alene River. We are a family-run ranch committed to the integrity of our land—not just sustaining it but regenerating our ground every year. By moving our cattle to fresh pasture daily, we mimic the migration of wild herds, which builds healthy topsoil, increases biodiversity, and promotes a thriving ecosystem while also growing delicious, healthy beef. Our cattle are raised naturally without the use of grain, growth hormones, or antibiotics, and we never use herbicides on our pastures. We specialize in heritage breed composites that look like cattle your great grandparents would recognize, and which produce smaller, more manageable cuts with the exceptional inter-muscular marbling and flavor that only excellent grass-finishing can achieve. Ordering Information: Options: We sell beef by the quarter, half, or whole animal. Harvest: We harvest from July through November to ensure animals have had at least 90 days on green, growing grass. Processing: All beef is dry-aged for at least 10 days and custom cut by local butchers. Logistics: Pickup is at the butcher.
