Our Scottish Highland cattle have thick hair and are a slow-maturing breed which produces a high-quality, lower-fat meat compared to other beef. Research studies in the UK and USA have shown that Highland meat can be up to 38% lower in fat and 4% lower in cholesterol compared to the beef you find at the grocery store. Our cattle are on free-range pasture their whole lives. Highland cattle like to roam, helping to manage the grassland in a sustainable way, without causing damage. Our grass-fed, grass-finished Highland beef are available in whole and 1/2 packages. If you order prior to our butcher date, it will be custom cut and wrapped to your order.
